Pizza – It’s been the universal party snack no matter what your drinks are. Beer, Vodka, Rum, Whiskey; I even like it with wine!!! For breakfast, lunch and dinner, any time of the day, a pizza can never go wrong. The time has come and change is what is required. Say goodbye to the mundane Margherita and Pepperoni Pizza, because this time I'm going to show you a different kind of pizza that will blow your mind.
Pizza Dough- You can find this recipe in my Hangover Cure blog. With this, you can make 4 medium sized pizzas.
4 medium sized Sweet Potato, Skin on > Sliced (about ½ inch thick)> Par Boil in salted boiling water.
2 tbsp. of fresh or dry Thyme.
3 cloves of Garlic, finely chopped.
2 medium sized Onions, sliced.
150 gms of Mozzarella Cheese.
Salt and crushed black pepper for taste.
Refined flour mixed with a tbsp. of Semolina for dusting the surface.
Add ½ tsp. of olive oil and add the sliced onions with a pinch of salt. Allow them to caramelize on a medium flame till it turns golden in color. Once done, allow it to cool.
Toss the par boiled sliced sweet potatoes in a bowl with olive oil, finely chopped garlic, salt and crushed black pepper.
Divide the dough into 4 equal balls. Dust the surface lightly with the flour and semolina mix. Take one of the dough balls and flatten it using a rolling pin or with your hands, whatever you are comfortable with. Make sure the surface is even so it cooks properly. Also just for fun, make it into any shape other than in a round shape as always. I know not getting a perfect round base can be disheartening, but trust me odd shaped pizzas look even more rustic and tempting as ever. #BeDifferent.
Line the sweet potato on the base, and sprinkle thyme over it. Scatter the caramelized onion over it and put small torn pieces of the Mozzarella over it.
Bake in a pre-heated oven at 180º c for 25-30 mins till it's golden and crisp.
Cut into pieces just the way you like it and serve hot.
I know it's convenient to call for a pizza which will be delivered in 30 mins. However, you really need to eat a pizza freshly out of an oven to know what you are missing out on. Plus, if you are well prepped up, this pizza can be made in 30 mins too.
Try adding some Rosemary to it for a herby affair. You can try out 2 types of cheese too, like finish it off with grated Parmesan cheese once the baking is done. Please do not add Cheddar cheese as I did, as it does not really taste good. I know meat lovers do not like this, but you can add slices of Prosciutto, Crispy Bacon or Ham as a topping on the Pizza. Be fearless and go for it because this Pizza is Deliciosso!!! Stay Hungry!
