People who are quite skeptical about a Karaoke night have always surrounded me. It’s that type of a night, where alcohol is a must before you sing. It simply gives you that extra guts you need. Well! Not this time. This time,  with this next whip of my recipe, I have decided to give you a taste of classic French appetizers which will be perfect to fit your Karaoke nights. Indulge in these delectable Smoked Salmon and Cream cheese tartines along with a Mushroom Paté and toasted Baguettes will make you go out there and test your vocal chords without that alcohol.

Prep time: 20 mins

Cooking time: 20 mins

Serves: 8 people


Smoked Salmon and Cream Cheese Tartines on Toasted Rye Bread with a Red Onion and Caper Relish.

Smoked Salmon Slices – 200 gms, you will find these at Local Gourmet food stores.

Cream Cheese – 100 gms

Cream 2 tbsp

Chives, chopped till its 1 tbsp

Salt and Pepper to taste

For the relish:

Finely chopped red onions + Finely chopped dill leaves + 2 tbsp capers + Squeeze of half a lime + Seasoning.

Slices of Rye Bread, Toasted.


Add the cream cheese, cream and chopped chives in a bowl and whisk till fluffy. Store in the refrigerator till you use.

Spread this over toasted slices of Rye bread.

Cut this slice diagonally, or as per your choice.

Place the thin slices of smoked salmon on each and spoon over a tsp of the relish.

Garnish with a Dill leaf and serve.

Mushroom Paté.

Butter – 40 gms

Olive oil - 2 tbsp

Button Mushrooms, roughly chopped – 400 gms

1 medium sized onion, finely chopped

4 cloves of garlic, finely chopped

1 ½ tsp of fresh thyme leaves.

60 ml of whiskey

100 gms of cream cheese

A handful of flat leaf parsley or coriander leaves

Salt and black pepper (freshly ground)


Heat butter and oil in a large bottomed pan on a medium heat. Add onion and cook for 3-4 mins. Add garlic and cook for 1 min.

Increase the heat to high; add chopped mushrooms and cook for 5 mins, stirring occasionally. You will notice water oozing out of the mushrooms, let it evaporate.

Add thyme leaves and stir.

Add the whiskey and flambé. Be safe while you try this as when you add alcohol to a hot pan it catches fire for a few seconds till the alcohol is cooked off. This ensures that the dish has the concentrated flavor of the whiskey.

Cook till all the liquid has evaporated.

Remove this mixture in a bowl and cool for about 15 mins. Transfer into a food processor along with parsley and cream cheese and blitz it u till smooth. Taste and adjust the seasoning.

Transfer into a jar or a serving bowl and cover and store in the refrigerator for 1-2 hours.

Meanwhile, toast the slices of baguette in an oven @ 180º with a drizzle of olive oil for 8-10 mins.

Serve the Mushroom Paté with toasted baguette.

So it's a win win for a perfect Karaoké Soirée which is gonna make you sing sing. You can serve these with Cream Crackers/ soup sticks / Nuts as well. Try these easy appetizers and make your Karaoke a classy affair.
