Anup Sahoo - Shaking things up in the City of Joy

Smitten by the first sip

Anup always wanted to be a bartender. His inspiration? The Tom Cruise-starrer ‘Cocktail.’ “My friends were all getting into engineering and banking and I wanted to do something different. And here I am, thanks to Hollywood,” he laughs.

 

Been there, done that

Anup studied at the IIBT, before working at the Leela Kovalam, freelancing in Mumbai and finally moving to Kolkata. The City of Joy is different from Mumbai, he says. “There’s an unpredictability to the business here which adds to the challenge.”

Loving the job

Having decided quite early on, that behind the bar is where he wanted to be, he enjoys every moment of it. “I don’t know what it’s like in other professions, but I get to talk to so many people in the course of one night. Guests talk to me, too, often sharing stories, and there’s never a dull moment. My job also lets me explore my creative side when I conjure up new cocktails.”

Off-duty action

“In my spare time I go to other bars,” says Anup with a laugh. “It’s mostly to keep track of what they are up to and I pore over the menus and check out what’s on offer.”

Fave tipple

“I like a cranberry mojito, where cranberry juice replaces the lime,” says Anup.

His World Class cocktails

Anup’s World Class creations were Coco Cucumber – white rum, coconut cream, cucumber, mint and a splash of Sprite – and the Japanese-inspired Kingyo – Tanqueray, blue curacao, coconut water, lime and a strawberry jelly cube garnish.
