Lime juice – 15ml

Sugar syrup – 20ml

Saffron – pinch

Egg white - one

Rose water and sandalwood decoction – 5ml

The Technique

Infuse gin with saffron in ISI canister using N2O cartridges. Dry shake and shake all ingredients. Fine strain into chilled coupe glass. Garnish with edible flower.
