This no-cook idea is super cool for summer. Into your large mixie jar put in half a cup of chopped cucumber, a chopped tomato, lemon juice, salt, a dash of olive oil and whizz till smooth. Serve chilled in bowls with some croutons on the side.
Get shop-bought chapatis. Spread them with cheese spread. Sprinkle with some sliced veggies such as coloured capsicums. Add salt and pepper to taste and wrap up to make a roll. You can even carry this to work for a light lunch.
