Russian Salad With Vodka Mayonnaise

I like those people who like alcohol in their food too. If I could, I would love to eat rather than drink alcohol.

So this time, I bring to you the mélange of the most loved sauce and YO YO Honey Singh’s favourite spirit, Vodka Mayonnaise!

I don’t know whether Russians would appreciate YO YO’s track on Vodka but they are surely going to love this salad. We all have our versions of this classic Russian Salad that we have been eating. Well this one is with the YO YO twist. 

Try it out and you will stop having regular Mayonnaise again.

 

 

Prep time: 10 mins

Cooking time: 10 mins

Serves 4 people.

Ingredients:

50 gms sweet potato, diced and boiled

50 gms green peas

50 gms carrots, diced and blanched

50 gms of sugar snaps, string and blanched

50 gms of French beans, string and blanched

50 gms of pineapple, cut in dices

4-6 hard boiled eggs

For the Vodka Mayonnaise:

2 cloves of garlic, coarsely chopped

4 egg yolks

3 tbsp. Dijon mustard

2 cups sunflower oil

60 ml Vodka

Method:

For the Vodka Mayonnaise, place garlic on a chopping board, sprinkled with a large pinch of sea salt and, using the flat side of a large knife, crush garlic and salt together till they form a smooth paste. Place egg yolks, garlic paste and mustard in a bowl and stir to combine. Whisking continuously, gradually add oil, drop by drop at first, then in a thin, steady stream till it is thick and emulsified. Add vodka and whisk until incorporated, then season to taste with sea salt. Cover closely with plastic wrap and refrigerate until needed. Make about 2-3 cups of Mayonnaise.

For the Salad, add all the ingredients in a large mixing bowl and add 2-3 tbsp of Vodka Mayonnaise. Taste and adjust seasoning. Remove the salad on a bed of Arugula leaves in a serving bowl and pass the remaining Vodka Mayonnaise separately.

Simple and quick, isn’t it? 

It's better to make your own mayonnaise instead of stocking up on store-bought ones. In fact, at stores, you won't find one with Vodka in it! Try making the mayonnaise in a food processor for a hassle free and less tiring experience.

CAUTION! This Vodka Mayonnaise can be very tempting and you might directly drink it out of the bottle. Please only use this as a spread, dressing or a dipping sauce.
