How does coming back from work, taking out some chicken legs from the fridge, thawing and then marinating them, then going off for a walk/ to the gym/ for yoga, then coming back and bunging the chicken into the oven, going for a shower, coming out and sitting down for dinner sound to you?
If it sounds like a plan then you will agree that buying an oven is the smartest thing a guy can do for the kitchen. Yes, you can bake cakes, make bread and all that too but even if you don’t plan to be a miracle worker, an oven’s quite a handy thing to have in the kitchen.
This recipe for a Mediterranean themed Grilled Chicken with Baked Potatoes will tell you why.
1 finely chopped onion
2 potatoes, peeled and thinly sliced. Parboiled in the microwave with water for 4 minutes
4 chicken drumsticks (skinned if you want low cholesterol), score or slit the chicken with a knife for the flavours to go in
1 teaspoon each of Mid Eastern spices such as sumac & zatar pita powders (available in stores such as Godrej Nature’s Basket or Food Hall)
1 teaspoon of seasalt (this gives a crunch, else use regular table salt)
3 tablespoons of balsamic vinegar
2 tablespoons of extra virgin olive oil, ½ teaspoon of paprika or ½ teaspoon of chilli infused olive oil
Ingredients (For 2) :
Grease the base of your baking dish/ tray with olive oil
Layer the base with the chopped onions. This ensures that the chicken doesn’t stick to the vessel and adds a nice flavour too
Place the parboiled potatoes on the onions. You have to parboil the potatoes as they take a while to cook
Mix the chicken in all the spices, salt, oils and vinegar and then place them on the potatoes
Let it marinate for at least half an hour
Preheat the oven at 200 C for 10 minutes
Cover the baking dish with an aluminium foil and put it in for 20 min at 200 C. This ensures that the chicken remains moist and the flavours of the marinade integrate into the dish
After 20 min, take out the tray wearing oven mitts as. Take the foil off. Turn the chicken over. Put the tray back into the oven without the foil
Keep it in for another 15 minutes at 200 C
Once done, let the chicken ‘stand’ or rest inside the oven for ten minutes. This allows the juices and flavours to settle down
That’s it. Dinner’s ready. Time to plate up
