Hello February! It’s the month of love and this time I bring to you something that will be best served in bed. I have a cracker of a recipe for a perfect Valentine's day breakfast in bed.
Valentine's day is usually celebrated as a day favoured to the ladies and all things are chocolates, flowers and diamonds. Well, it takes two to tango, hence His & Her jam!
Caution: Both the jams are orgasmic; you will want to spread it on everything in your sight and eat it.
Prep time: 15 mins
Cooking time: 45 mins
Serves 2 (The jam can be stored upto a week for a weeklong Valentine's day celebration)
Strawberry & Vodka jam
- 2-3 cups of strawberry, hulled and halved
- 1 cup of castor sugar
Chop the strawberries roughly and add it to a pan along with the sugar. Do not chop them fine as the strawberries will cook up and mash down by itself. Once the berries have started to soften, add a tbsp. of balsamic vinegar and 60 ml of Vanilla flavoured vodka to it and allow the alcohol to evaporate. Boil rapidly for 20-30 mins. You will notice the colour will intensify and texture will be rich and gel like. To test, swirl a spoon in this hot jam, when you remove the spoon, the jam should cling to it, which indicates the perfect consistency for this. Ladle it in sterilized jars and store. You can store upto a week.
Bacon & Bourbon jam
- 500 gms of Bacon, chopped
- 1 medium sized red onion, finely chopped
- 3 cloves of garlic, finely chopped
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ cup bourbon whiskey
- ½ cup of maple syrup
- ¼ cup balsamic vinegar
- ½ cup brown sugar
Over medium flame, fry bacon on a hot pan till it turns brown and crispy. Use two pans if required to get a crisp bacon bits. Remove the crunchy bacon on a paper towel to drain the excess fat, while keeping about a tbsp. of fat remaining in the pan. Add a chopped onion and allow it to caramelize for 2 min over medium flame and then add garlic and sauté for a minute. Add chili powder and paprika and combine well. Increase the heat to high flame and add the bourbon and maple syrup.
Caution: Be careful while adding any alcohol to a hot surface of a pan. It can catch fire creating a flambe.
Bring it to a boil, and scrape off the bits from the bottom of the pan and allow it to boil for 2-3 mins. Add vinegar and brown sugar and continue to boil for 3 minutes. Toss the fried bacon to the pan and mix well. Allow it to cook for about 10 mins on a low heat till it becomes sticky and has a jam like consistency. Turn off the heat and set aside. Drain off the excess fat from the surface of the jam using cheese cloth and remove the jam in hot sterilized jars.
You can even grind it in a food processor and make it even fine if you like, however I like it crunchy. The choice is yours! Store the jars in the fridge for upto a week and heat it in a microwave if you like before you spread it on everything possible.
Bet this jar is not staying in your fridge for more than 3 days.
Cut Hot Dog bread into fingers.
Whisk an egg, milk, 2 tbsp of castor sugar & a dash of cinnamon powder together in a bowl.
Dip the fingers in the egg mix and fry it in a pan of golden melted butter over medium heat till it turns golden brown on all sides.
To serve, mount the fingers; throw some fresh mulberries and icing sugar dust over it for a lovely touch to your romantic start to this day. You can even try out 2 strokes of the strawberry jam on a white plate and get the creative genie out of you. Just remember to not waste too much of time plating this and focus on the brownie points you are going to get once your date tastes this super breakfast made with nothing but love!
